Quick and delicious, this interesting combination of crunch ingredients makes an appealing salad to serve with a sandwich or with a meal.
Ingredients6 slices bacon cooked crisp1 lb fresh spinach leaves, washed. stems removed 1 apple unpared. cored and sliced 3 green onions, thinly sliced 1/4 cup salted sunflower nuts or toasted sliced almonds Dressing: 3 Tbsp white wine vinegar 1 tsp sugar 1 tsp Dijon-style mustard 1/2 tsp salt 1/2 tsp. black pepper 1/4 cup olive or salad oil DirectionsCrumble bacon. Toss with spinach, apple and onions in salad bowl.In small bowl, whisk together vinegar, sugar, mustard, salt and black pepper. Whisk in the oil until blended.
