Ingredients

3 cup whole bran flakes (Hodgson Mill)
1 cup boiling water
2 cups buttermilk
2 eggs, slightly beaten
1/2 cup salad oil
2 cups blueberries
1 cup sugar
2-1/2 cups unbleached flour
2-1/2 teaspoon soda

Directions

Preheat oven to 425 degrees. Combine bran and water in bowl. Let stand to soak and cool. Add buttermilk, eggs, and salad oil; mix well. Stir in blueberries. Mix remaining ingredients together. Add to bran mixture. Spoon into foil-lined muffin pan. Bake at 425 degrees for 20 minutes.
